1/2 pound of Jimmy Deans sausage, 1 block of cream cheese, 1 can of rotel, & 1/2 cup monterey jack cheese. Cook sausage, drain set aside, warm cream cheese in microwave, combine remaining ingredients, stir well, serve with tortilla chips. Men love this.

1 pack of powder Ranch Dip, 16 oz sour cream, bacon bits, and finely shredded cheddar cheese - mix together and serve with your favorite cracker! This is a must have at any tailgating party! Easy to travel too - just keep cold :)

Southern Caviar -- mix one can each of black beans, black-eye peas, and great northern beans. Add a chopped tomato, half a chopped onion, four chopped green onions, about a tablespoon of diced jalapeno, and three cloves crushed garlic. (You can add some cilantro or green peppers if you like.) Mix together, then pour eight ounces of Italian dressing over it and mix it up. Marinate for at least two hours, drain, and serve --either as a salad or with tortilla chips. My favorite!

Crimson Green Bean Bundles.

2 cans of whole green beans
Catalina Dressing
Bacon

Drain green beans. Slice bacon in half and wrap 5-8 beans in bacon slice. Arrange in casserole dish. Pour catalina dressing over the top generously. Bake on 350 for 45 minutes. These will be your family's favorite for tailgating and celebrations alike.

Buffalo Chicken Dip:
1/2 cup Blue Cheese Dressing,
1/2 cup Frank's Red Hot Wing Sauce, 1 cup Mozzarella shredded cheese, 2 cans White Chicken meat, 8oz Cream Cheese. Soften cream cheese and add all ingredients. Bake at 300 degrees til hot.

8 oz sour cream
8 oz mayonnaise
pack of bacon
1 medium tomato,diced or can of petite diced tomatoes

cook, pat off grease, and crumble bacon. Mix all ingredients together. Chill overnight. Travels easily in a container to your tailgate -serve in a hollowed out head of lettuce with bagel chips, or torn french bread, or toast points. Tastes just like a BLT! Never have any leftovers!

I pkg little smokies and one tube of refrigerated dough for bread sticks . Unroll each bread stick and cut into thirds. Just the right size to wrap around each little weiner. Place on baking sheet and follow baking instructions. Can serve with spicy brown mustard.

We love White Pizza Dip! It's makes an appearance at every Penn State party we have! Here's the recipe:

1 envelope Lipton Recipe Secrets Savory Herb and Garlic Soup Mix
1-16 oz container sour cream
1cup (8 oz) ricotta cheese
1 cup mozzarella cheese, shredded
1/4 cup pepperoni, chopped

Preheat oven to 350 degrees. In a shallow, 1 quart casserole, combine soup mix, sour cream, ricotta cheese, 3/4 cup mozzarella cheese and pepperoni. Sprinkle remaining 1/4 cup of mozzarella on top. Bake uncovered for 30 minutes or until heated through. Serve with slices of Italian or French bread or your favorite cracker.

I like to do this the day before.

I take a Jennie-O Boneless Gourmet Carving Turkey Bird. I inject with spicy ranch dressing. let st for 4-5 hours. Deep fry for 1 hour in peanut oil. Slice to order!

BBQ Sundae -- Prepare your fave pork bbq, baked beans and cole slaw. Layer the bbq, beans, then slaw in a tall, clear plastic cup. Repeat, ending with slaw on top. It is the "whipped cream." Finely chop jalapeno peppers and sprinkle on top for "sprinkles." Add a cherry tomato on top and stick a green onion in the sundae as a garnish. Enjoy!

Cucumber Dip
1 dry pack Italian Dressing
1 8oz. cream cheese
Mix together serve with sliced cucumbers on small bite size pieces of bread!

Take 1 cup sour cream; 1 cup mayonnaise; 1 pkg. real bacon pieces and 1 med. tomato chopped. Mix all together and serve with fritos dip style chips. Taste like a BLT. Also easy to make at the party! Everyone loves this!!

Pinwheels

2 packages of cream cheese
2 cans of pimentos
1 large can of diced olives
2 packages of thin ham
1 package of Hidden Valley Ranch seasoning
1 package of tortillas 8"

Mix cream cheese and ranch seasoning. Spread mix on tortilla, then layer ham, olives, pimentos (drained). Roll up and place in tupperware to chill overnight or at least 3-4 hours. Slice tortillas into 1" pieces. Place on a tray. AWESOME!!!!!!

Burgers and dogs get old by the end of football season - my gang loves to warm up with Jerk Chicken Chili. You can make it ahead the day before and bring it in a crock pot or heat it in a pan on the grill. If you want a change of pace, pour the chili over tortilla chips and top with sour cream for great Game Day nachos!

Sauté 1/2 onion (chopped), 2 tbsp mince garlic, and 2 stalks celery (chopped) in 2 tbsp butter. Add 3 cans crushed tomatoes, 2 cans chicken broth, 2 cups water, 2 tsp jerk seasoning, 2 tsp chili powder, 1 tsp cumin, 1 tsp pepper, 1 tsp salt and bring to boil. Add 2 cans drained black beans and boil 25 minutes. Add 1.5 lbs shredded cooked chicken and 5 tbsp brown sugar. Reduce heat and cook until desired thickness.

Take 1 block of cream cheese. Top with pepper jelly (any flavor). Spread onto crackers. Taste great and is quick and easy to make. Taste great!

Our favorite is to make our own version of Rendezvous plate. We take Smoked sausage and grill both sides for about 7 min/ side. Cut into very thin slices. Sprinkle liberally with Rendezvous dry seasonings. Serve with hot sweet pickles (we always use Pablo's Pickles), cracker barrell sharp cheese and saltine crackers. Always great even when Vandy's being Vandy!!!

stuffed poppers. halve and clean peppers (remove seeds) . mix one block of cream cheese, diced black olives, one package of real bacon bits and one cup of shredded cheese. Put filling in peppers and bake at 350 for 20 to 30 min.. (larger the pepper the more time needed)
these are great hot or cold!

Passed down through Co. G-2 Gators(USMA) and used at every "Tail-gator" supporting our Army Black Knights!!

8oz pkg. softened cream cheese, 3 lg. skinless chicken breasts, 1 cup of Ranch dressing, ½ cup Texas Pete Buffalo Style Chicken Wing Sauce, 2 cups sharp shredded cheese, Texas Pete Hot sauce

Shred chicken, Heat chicken in skillet and move to slow cooker. Stir in cream cheese, ranch, and wing sauce. Stir in shredded cheese. Cover and cook until hot and slightly bubbly. Serve with chips or celery or refrigerate until ready to serve.

Spicy Pimento Cheese
16 oz. sharp cheese +8 oz. pepper-jack cheese grated, 4 fresh seeded/chopped jalapeno peppers, 2 cups mayonnaise, 1 jar roasted red peppers chopped, black pepper to taste. Mix well, refrigerate. If not spreadable add Tbsp. mayonnaise. Use as dip with Bagel chips or on bread for sandwiches.

1/3 lb each (sliced thin) of
genoa salami
honey baked ham
baby swiss
provolone

1 jar roasted sweet peppers
3 eggs
1/3 cup Parmesan cheese
2 pkgs crescent rolls

Roll 1 pkg crescent rolls in a lightly greased 9x13 pan. Place cheeses and meat on top. Drain roasted peppers and place on top of cheese and meat mixture. Mix together eggs and Parmesan cheese. Pour mixture over meats, cheeses and peppers. (reserve 3-5 tblsp for later)
Roll crescent roll over top of layers. Brush remaining egg mixture over crust.
Bake covered for 30 minutes in 350 degree oven. Remove foil-bake until browned. Remove-let cool-slice into small squares--can be served hot or cold---WOW--enjoy!!

2 blocks cream cheese, softened
1/2 - 1 cup diced pickled jalapeno peppers
1 cup freshly grated Parmesan Cheese

Mix undrained peppers into cream cheese; adjust to taste. Top with cheese. Bake at 350 degrees for 20 minutes. Serve with baguette rounds, flatbread,or tortilla chips. Serve hot or cold.

Bama Buffalo Wings
One large bottle Zesty Italian Salad Dressing

One large bottle Tabasco Sauce

One stick Parkay

One clove crushed garlic

5 pounds chicken wings

deep fry chicken in peanut oil
Simmer sauce for 15 minutes and pour over chicken

ROLL TIDE ROLL!!!!!!

Black Bean Salsa Dip

1 can Mexicorn
1 can Black Beans (rinsed and drained)
1 can Ro-tel Original
1 can Ro-tel Mexican (with lime and cilantro)
1/8 cup olive oil
1/8 cup red wine vinegar
1/4 cup chopped fresh cilantro
chopped green onions (optional)
dash of hot sauce (optional)

Drain corn, beans and Ro-tel. Mix all ingredients well and serve with tortilla chips. This recipe is extremely easy and travels very well!

Ham Roll Ups

1 package sandwich ham slices
Green onions
1 8 oz cream cheese

Take one slice of ham, spread cream cheese on ham, put 1 gr. onion in middle and roll ham slice up. cut into small bites and secure with toothpick. Yummy!!

Bacon Jalapeno Chicken Strips

Boneless, Skinless Chicken Strips, Bacon slices, Pickled Jalapeno peppers, BBQ sauce and Italian Dressing. Wrap chicken strip around pepper then wrap bacon around strip. Stick securely on wooden skewers that have been soaking in water. Store to travel to game. Mix BBQ sauce and Italian Dressing equally and place in container to travel. Place chicken combinaton on grill and grill about 10 minutes. Turn and then start coating with sauce mixture. Grill additional 15-20 minutes or until chick has cooked completely. Serve on skewers. Mmmmm...so good!

Take a roll of pre-made chocolate chip cookie dough ( or a batch of homemade) roll into small balls and place in mini muffin tin.
Bake for 10 minutes
When you remove from oven immediately press a mini reeses cup on the center of each
let cool completely and remove from tin

2Cups your Favorite Recipe Artichoke Dip add:
1 - 2 oz can chopped jalepenos, drained well
1/4 cup Cherry Craisins
1/4 cup chopped pecans
Chill 1 hour or one day.

Serve with Rice Crackers or any stiff cracker that will hold up to scraping the bowl clean.

Our kids love this dip, or maybe it is just the tailgate party and how many new friends we meet when we share our dip.

Jalepeno Artichoke Dip

To 2 Cups of your Favorite Artichoke Dip Recipe (SL April 2004 "Quick Artichoke Dip" is great for this) add:
1 - 2 oz can chopped jalepenos, drained well
1/4 cup Cherry Craisins
1/4 cup chopped pecans
Chill 1 hour or one day.

Serve with Rice Crackers or any stiff cracker that will hold up to scraping the bowl clean.

Beef & Cheese Foldover:
Brown 1 lb. ground beef with 1/2 cup chopped onion. Drain. Add 3/4 cup BBQ sauce. Simmer 5 minutes. Unroll 2 cans crescent roll dough. Press together along long sides. Put ground beef mixture down center of dough within one inch of ends. Place 6 slices american cheese over top. Fold dough over. Press to seal. Bake 350 degrees, 25 minutes. Everyone is a fan of this sandwich!

Easiest and yummiest dip ever! In a bowl add one cup of shredded cheddar cheese, one cup of mayonnaise and one cup of finely chopped onion. Pour into a baking dish and bake at 350 degrees for 30 minutes. I serve this dip with Fritos scoops. So easy so good!

My 5-ingredients Chicken Salad recipe is a tailgating favorite. Combine 1-large cooked skinless/boneless chicken fryer (white meat only); 2 1/2 cups Miracle Whip; 1-small jar sweet pickle relish; 3-chopped boiled eggs (remove yoke); Seasoning-add salt & pepper to taste. Serve on sliced
croissant rolls.

Shrimp Dip

1 8 ounce cream cheese softened

1/2 pound of boiled shrimp chopped up into bite size pieces

1 cup of your favorite cocktail sauce

1 box club crackers

spread softened cream cheese on bottom of platter, top with shrimp, and sprinkle with cocktail sauce. Use crackers for dipping.

1 8 oz. block cream cheese, softened
1 can refried beans OR black beans, drained
1 jar of your favorite salsa
1 1/2 bags of favorite shredded cheese

Spread cream cheese on bottom of 9x13 pan. Add a layer of beans. Add a layer of salsa. Cover with cheese. Bake at 350 degrees until cheese bubbles. Serve with favorite tortilla chips.

Tiger Rice Salad
1 pkg.Rice a Roni, prepared, cooled.1 jar. marinated artichoke hearts,cooked shrimp, chopped green onions, bell pepper.Mix with mayo and juice/marinade from artichoke hearts, salt, pepper. Chill and bring to the tailgate. It makes the "all Louisiana Team"! Double and share with your tailgate neighbors!!!

These disappear quickly!
Slice one package of 24 count small dinner rolls horizontally. Spread cut sides with a mixture of 8 oz. cream cheese, 1 package ranch dressing and 1/2 c chopped green onions. Layer one pound of roast beef and 12 slices of swiss cheese on bottom layer of rolls. Cover with top layer of rolls and brush with butter. Wrap with foil and bake at 350 for 15 minutes. When ready to serve, unwrap and slice into 24 rolls. Dress up with team colored toothpicks!

I usually double the recipe and my family gobbles them up quickly!

Texas Cavier

Bring to a boil and let cool the following:

1 tsp salt
½ tsp. pepper
1 cup water
1 cup sugar
¾ cup Apple Cider Vinegar
½ cup oil

Mix following together and add to liquid:

1 can Pinto beans, drained
1 can Black eye peas, drained
1 small jar (4 ox.) Pimientos
1 cup green pepper, chopped~ (one whole)
1 sweet onion chopped, any size
1 cup celery, chopped ~ (2-3 stalks)
1 tbsp. chopped Jalapeños ~ (add more if desire)
1 can sweet corn, drained

Marinade for 24 hours or more, drain and serve with Fritos corn chips or tortilla chips.

Cowboy Caviar - It's easy to make and fabulous all day long!

Mix in 2 cans black beans, 2 cans corn, 1 can hot rotel, 1 jar pimentos, a chopped green pepper, red pepper, and onion, diced jalapenos, small italian dressing, and italian dressing packet. Serve with corn chips.

This can be prepared for cooking ahead, but you prep at the tailgate in a turkey fryer. Its what we call shrimp boil, sometimes called Low Country boil, with corn, shrimp, scallops, crawfish, potatoes, sometimes artichokes, carrots, sometimes squash. Its fun and festival and draws quite a crowd. Love it, love it. We do this every year at UK Wilcats games. Cover a table with white paper, pour the food right on top. Serve with beer, wine, soft drinks and a Wildcat win!

ROLL TIDE MARGARITA's

1/4 cup sugar
1/4 cup hot water
1 1/2 cups pomegranate juice
3/4 cup tequila
1/2 cup fresh lime juice (about 6 limes)
1/4 cup orange liqueur
Ice cubes
Garnishes: orange and lime slices
Preparation

Stir together sugar and hot water until sugar is dissolved. Stir in 1 1/2 cups pomegranate juice and next 3 ingredients. Shake over ice, pour and yell ROLL TIDE!

Tailgate Sausage
Cut one pound of Conecuh sausage into one inch lengths and place in a crockpot. Add one jar Bama apple jelly and one small jar of mustard. Turn crockpot on high for 20 minutes and then low for two hours. Serve in a chafing dish (or cold).

Buffalo Chicken Dip

2 pkgs cream cheese
2 large cans white meat chicken (drained, shredded with fork)
1 cup ranch dressing
1 cup Buffalo Sauce
1/2 cup sour cream
shredded monterey jack cheese
shredded sharp cheddar cheese

Stir first 5 ingredients together. Place in crock pot and top with cheeses. Cook on lowest setting until game time.

Serve with assorted crackers.

RED ONION DIP-

Large skillet, heat 3 Tbsp. veggie oil. Stir in 3 chopped sm. red onions, 2 chopped cloves garlic, 1/2 Tbsp. chopped ginger, 1/2 tsp. thyme leaves and 1/8 tsp. allspice; season w/salt and pepper. Cook, stirring, for 10 minutes. Stir in 1 tsp. brown sugar;let cool. Stir in 1 cup sour cream.
PAIR WITH CHIPS OR CRACKERS
SIT BACK, ENJOY LIFE, BE TAILGATE HAPPY, AND CHEER YOUR TEAM ON TO VICTORY!

best mojito for summer time !
1.25 oz Captain Morgan Original spiced rum
12 mint leaves
1 tbsp sugar
0.5 oz lime juice
2 oz soda or ginger beer

Place mint leaves in bottom of glass. Add crushed ice, Captain Morgan Original Spiced Rum, sugar, and lime juice, and muddle. Add soda water and garnish with mint leaves.
mix all in summer time is best drink ever !
