Spaghetti-sl-257728-l Q: After I drain cooked spaghetti, I rinse under cold water, then drain well.  However, when I put the pasta in a bowl or on a plate with the sauce, everything seems to water out...and I end up pouring off excess liquid.  What am I doing wrong?

A: Thanks for your email, Nikki.  Here’s what I recommend:  First, don’t rinse pasta.  Just drain it well — that’s it.  (Actually I reserve a few tablespoons of the pasta liquid to thin out sauce which is too thick or sauce I’m reheating).  Second, try adding the well-drained pasta directly to the simmering sauce — this allows the pasta to soak up some of the sauce/flavor...just toss in the hot pasta for 3 to 5 minutes while sauce simmers.  I promise it’ll yield good results.

My italian mother in law told me never to rinse pasta. Could that be the reason for your "watery" dish? Try it without rinsing, but do not let the pasta sit around or it will get sticky. Drain when you are ready to serve or ready for your next step ( i.e if baking further)
