Fried-chicken-sl-520342-l There are two types of people in the world; people that fry and people that don't. I'm happy to say that I love to fry. Unfortunately, it's not something that my diet will allow me to do often, but whenever I decide to treat myself to crunchy, crispy, juicy, chicken, I fry it.  There are several reasons you may not want to fry and I do understand your concerns.  Here are some of the reasons that I've heard and some tips that may help you change your minds. 

 "...the smell gets into everything and makes the house stink." HINT:  open two windows (for air circulation), use your ceiling fans, turn on the exhaust over the stove, and light scented candles.  Also wipe down cabinets, and countertops after frying. This is what I do and it really helps.  But who doesn't love the smell of fried food?

"...the hot oil splatters." HINT:  make sure your pots and pans are completely dry before adding oil.  One little drop of water can explode just to escape the heat.  Pat dry whatever you're frying (i.e. chicken, pork, shrimp) before dredging in flour or dipping in batter. WATER IS THE ENEMY! You can also use a splatter guard.

"...I can't tell if it's done." HINT:  use a thermometer to accurately heat the oil and test for doneness.  When frying dense things like chicken breast or thighs, I'll pierce each piece with a fork or skewer to allow the hot oil to penetrate the flesh.  Use heavy bottomed pots and pans including cast-iron skillets.  These allow the oil to heat evenly and help maintain a constant temperature.  Add a few extra pieces just for testing. (you deserve it!) And, chicken floats when it's done.

"...fried food is greasy." HINT:  if fried properly and at the correct temperature the food absorbs very little oil.  If you want you can press each fried item between two layers of paper towels to soak up any extra flavor (I meant fat!) or you can just enjoy fried items with a big green healthy salad.  It  really cuts down on the guilt.

I know that I haven't addressed all of your concerns, but hopefully this will help. If there is something that's keeping you from frying please let me know or if you have a favorite fried recipe you want to share, I would love to try it.

I must admit, I often (pretend to) shy away from eating or cooking fried foods for a variety of reasons! For me, the most obvious being the potential impact to my diet (girlish figure) and my culinary deficiencies in the frying arena. However, if there is a way to remedy both my current obstacles to fatty, flavorful bliss, I’m all ears (and greasy fingers)! The notion that “oven-fried” is nearly as savory is absurd, even if it is a healthier alternative!

Frying intimidates me! From the hot splattering oil to the uncertainty of whether I have an appropriate amount of seasoning, so its not something that I include in my culinary routine. However, frying chicken is definitely an art and hats off to those who exhibit precision in doing so.

I must admit I prefer fried; however, with high blood pressure and cholesterol I tend to shy away from it. The other thing is that it's just so much easier to throw it on the grill or in the oven.

After growing up on fried foods which most of us have, it was a hard habit to break. However, I tend to cook/eat it in moderation these days especially with potential health concerns such as high blood and cholesterol. As you stated, if fried properly at the correct temperature it absorbs very little oil. Besides, there is nothing like having beer and chicken when watching the game...

Better than opening windows, I setup a small cooking station on my back porch, with a small girlie grill and my deep fryer.

No more stinky house!

I like the suggestion about removing excess water/moisture from the food before frying to prevent spatter. It's very hard to remove grease from a black or stainless steel cooktop!

I agree with your hints. Even with a studio apartment I feel the smell is fairly easy to diminish and fried chicken is so worth the extra steps. Using a vinegar/water mixture(50/50) will cut grease on most surfaces.
