Mochacakessl1851568l Q: I can't wait to try your wonderful Mocha Java Cakes from the November 2008 issue.  I have two questions:  How far in advance can these be made?  Can they be frozen? Stella G.

A: Thanks for the questions, Stella.  Test Kitchen Professional Kristi Crowe, who has a PhD in Food Science, has first-hand experience with this recipe -- she originally tested it for the story, then prepared it for photo -- so Kristi can truly vouch for this terrific dessert.  Here's what she says:

These can be made a day ahead and reheated.  I know this because we had a couple left over when they were originally tested, and we warmed them in the microwave to enjoy the day after.  If you make them ahead, I would not recommend freezing them.  They can be reheated in a 350F oven for about 8 to 10 minutes or in the microwave.  As for storing them, I would think they would hold like brownies, covered at room temp, but something in me says that they should be refrigerated.  I would refrigerate, if made ahead, to be on the safe side since the inside is not completely set upon baking.

Wow what a delicious recipe! The ingredient list is all natural and I didn't see anything that would be bad for you within the ingredients. I'm going to print the recipe and give these Mocha Java cakes a try. Thanks!
